Rhi's Sweet Stuffed Punkin

1 pie pumpkin (top opened, seeds and strings pulled, saved for roasting later)
3-5 fairly firm sweet apples, cored and sliced
brown sugar
cinnamon
pumpkin pie spice
pecans/walnuts
1 cup orange juice or apple cider or white wine, or 1/2 cup juice and 1/2 cup amaretto or other sweet liquor
tpbsp of molasses (optional)

Four disposable wooden chopsticks.

Gut out pumpkin, be careful not to pierce shell. Put chopsticks pointing down and slightly piercing bottom, but not puncturing through.

mix together brown sugar, cinnamon, pumpkin pie spice, nuts and put a thin layer in bottom of punkin.

Place in a layer of apples,carefully arranging around chopsticks

repeat layer of spices,etc,

layer of stuff ad nasueam until pumpkin is full. Pour mix of juice/booze/ whatever over slowly, allowing to sink and mix completely. remove chopsticks (they help the liquid to mix in more evenly by creating space) Put on lid.

put in large baking dish and shove into oven and Bake at 400 until smells really good and the skin gives way when you poke it with a fork. Wait for it cool a bit, take off top, (make sure the baking dish you cook this in is deep, in case the pumpkin splits. You can still eat the goodies and it won't make a mess all over) scoop out a couple big scoops of pumpkin, apple and other yummy and serve as a side dish, or as topping over ice cream or pound cake or in some other cavity inducing manner. will keep in the fridge for up to a week and freezes well (unless you have bottomless pit beasts like I do to feed) Enjoy
