Here are the recipes I have made this week. Enjoy, and let me know how they turn out for you. :)

Crockpot Barley Vegetable Soup

1 cup medium pearl barley
1 bay leaf
1/2 tsp. fennel seed
9-oz. pkg. baby carrots
1 onion, chopped
2 stalks celery, chopped
3 garlic cloves, minced
2 sweet potatoes, peeled and chopped
2 cups frozen corn
2 cups frozen green beans
1/4 tsp. salt (optional)
1/4 tsp. pepper
3 (14 oz). cans vegetable broth
4 cups water
14-oz. can diced tomatoes with herbs, undrained

Place all ingredients except tomatoes in a 5-6 quart crockpot in the order given. Do not stir. Cover crockpot and cook on low for 6-8 hours. Stir soup and add tomatoes. Cover crockpot and cook for 10-15 minutes longer until soup is hot.

Remove bay leaf before serving.

Slow Cook Stew

Serves/Makes: 4 | Difficulty Level: 3 | Ready In: 2-5 hrs

Ingredients:
1/2 cup lentils, rinsed
1/2 cup navy beans, rinsed
2 cups chopped onions
2 cups sliced celery
5 carrots, scrubbed, sliced
1/4 cup brown sugar
1 cup barley
1/2 teaspoon thyme
1/4 teaspoon garlic powder
2 bay leaves
1 teaspoon freshly-ground black pepper
1/2 cup red wine (optional)
1 quart V-8 vegetable juice
2 cups water

Directions:
Combine all ingredients in slow cooker. Cook for 4 to 6 hours on HIGH heat or for 8 to 10 hours on LOW heat. Remove bay leaves before serving.

I'm not much of a cook, but I reckon even I would have difficulty mucking up that soup. *g* It's too warm for soup here now, but I'll be saving the recipe for next winter. Thanks!

That sounds delicious! I made a beef barley stew last week - there's nothing like some hot soup or stew when it starts to get cold and rainy outside. :)
