CHILI COOK OFF RECIPE

2 large cans whole tomatoes
1 48-oz can tomato juice
1 lb. cooked, drained ground lean hamburger
1 lb. cooked, drained (cut into bit sized chunks) deer meat *This really is the secret magic of the chili!
1-2 jalepino peppers
2-3 cloves garlic
salt and pepper to taste
1-2 T. chilli powder
1t. cumin
1t. cayenne (hot) pepper
2 cans kidney or chilli beans

This recipe is so quick and easy.
Brown you meats and add to the remaining ingredients (except beans). Heat through - the longer the better because it tenderizes the deer meat.
Shortly before serving, add the beans. Heat through and serve.

Venison Vegetable Chili
2 tablespoons bacon drippings
About 1 pound ground venison or ground elk hamburger
1 cup ground onions
1 cup ground carrots
1 cup chopped celery
1/2 cup ground sweet green pepper
1 can pinto beans in chili gravy
1 No. 2 can tomatoes or 3 cups tomato juice
Seasonings:
1 1/2- 2 teaspoons salt
2 teaspoons chili powder
1/4 teaspoon garlic powder
Generous pinch of oregano
Dash Tabasco
Shake of cayenne

Seasonings can be varied according to taste.

Melt bacon drippings, then brown meat until it no longer shows red. Add ground onions, cook for a few minutes, then add seasonings and blend well. Stir in the tomatoes and cook for 20 minutes. Add carrots, celery and green pepper and cook for another 20 minutes. Add pinto beans with sauce in can and cook for at least another 20 minutes. Long slow cooking blends the flavors. This will make a thick chili, so add liquid (water or more tomato juice) at will.

Original recipe from Mrs. Glenn K. Rogers of Cheyenne,WY

variations:
Kidney Beans drained and rinsed
instead of pinto beans in chili gravy
