Easy Low-Carb Lasagna

what you’ll need:
makes 16-20 servings
2 pounds ground beef
1 32 ounce jar marinara sauce
salt and pepper to taste
1 head of cabbage
1 egg
6 ounces shredded mozzarella cheese (reserve 2 ounces for top layer of lasagna)
6 ounces shredded parmesan cheese
1 cup of thick Greek yogurt or cottage cheese
let’s do it
preheat oven to 375 degrees
crumble beef in skillet and cook until browned
drain grease from beef then add to marinara sauce in medium sauce pan
cook on medium heat until sauce has reduced by half; about 15 minutes
add salt and pepper to taste
chop cabbage into ½ inch pieces and sauté in a little oil until softened
pour cabbage into bowl lined with paper towels
roll up cabbage in paper towels and squeeze out remaining water; set aside
combine egg, cheeses, and yogurt in small bowl
layer small amount of cabbage, then small amount meat sauce, and all of cheese mixture in 9″ x 11″ baking dish
layer remaining cabbage and meat sauce until finished
sprinkle on reserved mozzarella cheese
place baking dish on cookie sheet
TIP: this is to prevent a mess in oven if the lasagna boils over
bake 20 minutes; let cool 10 minutes before serving
