Baked cabbage steaks

1. preheat oven 400
2. wash and remove outer leaves trim stem off
3. cut 1 to 1 1/2 inch steaks
4. brush both sides with olive oil, garlic salt and pepper both sides
5. bake 30 to 40 minutes

I like mine at 40 min so edges start to brown delicious and calorie friendly

Philly Cheese Steak Stuffed Peppers
• 8 oz. Thinly Sliced Roast Beef
• 8 Slices Provolone Cheese
• 1 Medium Sweet Onion
• 6 oz. Baby Bella Mushrooms
• 2 Green Peppers
• 2 Tbs. Butter
• 2. Tbs. Olive Oil
• Salt and Pepper - to taste

Slice peppers in half lengthwise, remove ribs and seeds.
Slice onions and mushrooms.
Saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper.
Saute until onions and mushroom are nice and caramelized. About 25-30 minutes.

Preheat oven to 400*
Slice roast beef into thin strips and add to the onion/mushroom mixture.
Allow to cook 5-10 minutes
Line the inside of each pepper with a slice of provolone cheese.
Fill each pepper with meat mixture until they are nearly overflowing.
Top each pepper with another slice of provolone cheese.
Bake for 15-20 minutes until the cheese on top is golden brown.
Serve and Enjoy.

Southern Skillet Fried Corn

Ingredients:
6 ears of corn
3 tablespoons flour
3 teaspoons sugar
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups water
3 tablespoons butter

Directions:
Shuck corn and pull off silks. In a large bowl, cut the corn from the cob with a sharp knife.

Scrap up and down the cob with a spoon or knife to get the milk. Combine flour, sugar, salt and pepper in a small bowl, than add 1-1/2 cups of water. Stir with a fork or whisk to combine.

Melt butter over medium-low heat in a large, heavy bottomed skillet. Add corn and flour mixture and cook over medium-low heat for 20 to 25 minutes, stirring occasionally. Watch close it will stick..

Chickpea and Peanut Butter Cookies

Prep Time: 10 minutes
Cook Time: 15 minutes
Servings: 8

Ingredients:

1 can garbanzo beans
2 teaspoons vanilla extract
½ cup + 2 tablespoons natural peanut butter
¼ cup maple syrup
1 teaspoon baking powder
pinch of salt
3/4 cup vegan chocolate chips or carob chips
Instructions

1. Preheat your oven to 350°F / 175°C.
2. Line baking sheet with parchment paper.
3. Combine all the ingredients in a food processor except for the chocolate chips, blend until smooth.
4. Add chocolate chips.
5. With wet hands, form into 1½” balls. Take a fork and gentle press down to make ridges and more round shape (wet fork in between so it doesn’t stick).
6. Bake for about 15 minutes (or more if you like them crispy). Store in the fridge, they taste excellent cold!

Need a cool drink on a hot day? You should try making switchel, a colonial-era refresher. I just rediscovered this drink in The Old Farmer's Almanac archives.

Switchel was how hardworking farmers in early America's agricultural days quenched their thirst out in the hot, sunbaked fields. That's enough of an endorsement for me!

This drink is also called Haymaker's Punch (because it was drunk while haying fields), switchel is easy to make with just a few ingredients.

Cider vinegar is a key ingredient—which many folks find has added health benefits. Switchel is not only hydrating, but also energizing. It will give you that electrolyte boost better than any pricey energy drink or soda. It's basically a health tonic (but don't tell your children).

SLOW COOKER BBQ RIBS

Ingredients
.
1-3 slabs of back ribs (3 pork back slabs are shown in the picture)
1 can / bottle of Coke or Dr. Pepper (I used a bottle for my 3 slabs)
Sweet Baby Rays BBQ Sauce (or one of your choosing)
Salt and Pepper to Taste

Directions
.
Place ribs in a circular way to fill your slow cooker. Pour soda/pop over ribs, sprinkle salt & pepper over ribs - cover and cook on LOW for 7 hours. Empty liquid from the slow cooker. Pour a bottle of Sweet Baby Rays BBQ Sauce (or bbq sauce of your choice) over ribs and cook on HIGH for an additional 1 hour.

Be super careful when removing ribs from the slow cooker - they are FALL OFF THE BONE YUMMY!

Food Babe’s Almond Chocolate Freezer Fudge

Ingredients

1 cup almond butter
4 tablespoons of coconut oil
1 and ½ tablespoons of maple syrup
4 ounces quality dark chocolate
½ tsp sea salt

Instructions

Cream almond butter, coconut oil, maple syrup, and salt together in a bowl
Pour mixture into a parchment paper lined small baking dish (8×6)
Top with chopped chocolate and freeze for at least 2 hours
Remove from freezer, carefully remove fudge by lifting ends of parchment paper
Cut into 1 inch squares and store in freezer separated by parchment paper

Notes
~ 138 calories each so don’t get crazy and eat 10 at one time! ***Please buy all organic ingredients if possible***

ZUCCHINI SIDE DISH

Low carb!...YES!! talk about yummy!
SIMPLE EASY SIDE DISH...

Ingredients:

Zucchini
olive oil
garlic or garlic powder
tomatoes
salt and pepper
mozzarella cheese and/or parmesan cheese

Directions:

Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

NO FLOUR, NO OIL, NO WHITE SUGAR
Peanut Butter Chocolate Chip Cookie Dough Bites

Ingredients:
1 1/4 cups canned* chickpeas, well-rinsed and patted dry with a paper towel
2 teaspoons vanilla extract
1/2 cup + 2 tablespoons (165 grams) natural peanut butter (can use PB2 from gym to make healthier, check your labels )
1/4 cup (80 grams) honey (agave would be amazing too!)
1 teaspoon baking powder**
a pinch of salt if your peanut butter doesn’t have salt in it
1/2 cup (90 grams) chocolate chips

* My can was a 400 gram can, 240 grams without the water, and I used all but a few tablespoons

** If you need grain-free baking powder, you can use 1 part cream of tartar + 1 part baking soda + 2 parts arrowroot.

Directions:
Preheat your oven to 350°F / 175°C.

Combine all the ingredients, except for the chocolate chips, in a food processor and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re combined.

Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky.

With wet hands, form into 1 1/2″ balls. Place onto a piece of parchment paper. If you want them to look more like normal cookies, press down slightly on the balls. They don’t do much rising. Bake for about 10 minutes.

Yields about fourteen 1 1/2″ cookie dough balls.

On Christmas eve, do all of the prep work needed for this Christmas Eve Baked French Toast recipe. On Christmas morning, simply unwrap this baked French toast and place in the oven. This is definitely one of the best casserole recipes for breakfast.

Salsa quickly puts a Mexican spin on ever-popular pot roast!

Prep Time: 15 Minutes

Total Time: 10 Hrs: 15 Mins

Makes: 8 servings

Ingredients:

8 small red potatoes, cut in half
3-pound beef boneless arm roast, trimmed of fat
2 tablespoons Gold medal® all-purpose flour
1 pound baby-cut carrots
1 jar (16 ounces) Old El Paso® Thick 'n Chunky salsa


1. Place potatoes in 3 1/2- to 4-quart slow cooker. Coat beef with flour; place on potatoes. Arrange carrots around beef. Pour salsa over all.

2. Cover and cook on low heat setting 8 to 10 hours.

3. Remove beef from cooker; place on cutting board. Pull beef into serving pieces, using 2 forks. To serve, spoon sauce over beef and vegetables.

Makes: 8 servings

3 Tbsp sugar
1/2 tsp ground cinnamon
1 11-ounce can refrigerated breadsticks
shortening or cooking spray

Preheat oven to 375 degrees. Grease cookie sheet with shortening or cooking spray.

Cut each breadstick in half, crosswise.

In a bowl, mix sugar and cinnamon together. Evenly cover both sides of each breadstick piece with cinnamon-sugar mixture, then twist the dough into whatever shape you want and place on greased cookie sheet.

Cook for 10-13 minutes or until golden brown.

Ganked from another site: Chicken and Barley Chili to satisfy your taste buds tonight. Made with chicken and barley, this is a yummy recipe that will surely become a household favorite!

Serves: 8

Cooking Time: 25 min
Ingredients:

1 can (14.5-ounce) diced tomatoes
1 (16-ounce) jar of salsa
1 can (14.5-ounce) chicken broth
1 cup pearled barley, uncooked
3 cups water
1 tablespoon chili powder
1 teaspoon ground cumin
1 can (15-ounce) kidney beans, drained and rinsed
1 can (15.25-ounce) corn, drained
3 cups chicken breast, cooked, cut into bite-size pieces
Cheddar cheese, shredded (optional)
sour cream (optional)

Instructions:

1. In a stockpot, combine undrained tomatoes, salsa, broth, barley, water and seasonings.

2. Bring to a boil over high heat. Cover and reduce heat to low; simmer for 20 minutes, stirring occasionally.

3. Add beans, corn and chicken.

4. Increase heat to high; bring to a boil. Cover and reduce heat to low. Simmer for another 5 minutes, or until barley is tender.

5. Ladle into bowls. Top with cheese and sour cream, if desired.

PS. I know that there are a few of you who understand why the phrase "chicken and barley" sends me into fits of giggles -- and at the most inappropriate times, too! XD
